"How do the French pull off that serene and beautiful thing? Sel et Poivre has the trick down. Pale-yellow walls, hung with black-and-white French streetscapes. Pureed red snapper and sea bass are blended with a tangy tomato broth to make a full-bodied soup. The accompanying plate of homemade croutons, rouille sauce and shreds of Swiss cheese came with polite instructions from the waiter: "Spread ze sauce on ze crouton, top with fromage, and float in ze soup like little boats." The mushroom-leek risotto is rich and dense and tasted of dry white wine; the sauteed skate au beurre noir is similarly flavorful and luxurious. The $27 prix-fixe includes three courses - no substitutions. That's okay, because the divine chocolate mousse is included."
